What the traditional version is

Pork shoulder, cut into chunky cubes, marinated with loads of cracked coriander seeds and red wine for hours. It's browned in a generous pour of olive oil, then braised low with the marinade, a bit of salt and pepper, and sometimes a token onion. You'll get a rich, glossy sauce with plenty of oil on top, and tender, melt-in-the-mouth pork that's all about comfort and not about restraint.

What changed, and what each change costs

800g pork shoulder (lean and fat) for 800g pork loin, lean

Shoulder is packed with fat that melts into the sauce - great for a nap, less good if you want to stay upright. Loin is all lean muscle, so you still get the pork, but you trade melting chunks for meaty ones.

What it costs you. You do lose that soft, falling-apart texture and a good bit of richness. Loin doesn't soak up wine the same way, so you'll want to be careful not to overcook it or it goes dry. The sauce's still doing most of the work.

Olive oil down from 60g to 16g, just enough to brown the meat

Most of the original oil ends up floating on top anyway. 16 grams is enough for a decent sear without turning the pan slick. If you don't get the browning right, don't blame the oil.

What it costs you. The finished dish is lighter and you don't get quite the same gloss on the sauce. Mop up with bread and you'll spot the difference.

Add 200g chestnut mushrooms

You're swapping out fat, so you need something to give the sauce body. Mushrooms bulk out the dish and soak up some of that wine without pretending to be pork. Not a Cypriot grandma's trick, but I'll take the trade.

What it costs you. Mushrooms bring their own earthy note, but you might notice this isn't as luxurious as those Sundays at your aunt's.

The method is in the book

Afelia's never going to be a health food, no matter what you do to it. The original's a bit of a celebration and, yes, you'll miss the melting pork fat that makes a sauce you want to drink with bread. But this version gets you the backbone - wine, coriander and tender pork - without knocking you out for the afternoon. The mushrooms help the sauce along, but if you're a texture purist, you'll sulk. I stand by it: you get the soul, you just have to bring a bit more of your own gloss.
