What the traditional version is

Whole small fish dragged through seasoned plain flour and dropped into a massive pan of olive oil. They fry until the skin blisters and crisp edges form, soaking up enormous amounts of fat along the way. Served with a squeeze of lemon and a pool of residual frying oil on the plate.

What changed, and what each change costs

Frying fish turns it into a fat sponge, especially when it wears a flour coating. Brushing a tiny amount of oil over the skin gives the grill something to work with so the fish doesn't just burn into ash under the intense heat. It keeps the outside slightly lubricated while slashing the fat.

What it costs you. You lose that shatteringly crisp skin. There's no way around it. Grilled skin blisters beautifully and tastes wonderfully smoky, but it will never have that battered crunch you get from a deep fryer.

100g of plain flour down to 0g

Flour serves exactly one purpose here, which is to create a crust that holds frying oil and creates texture. Since I grill the fish, the flour would just turn into a raw, dusty paste. Dropping it cuts empty starch entirely.

What it costs you. Without the flour crust, the fish flesh is completely exposed to direct heat. You have to watch it like a hawk so it doesn't dry out. You'll miss the chewy, savoury edges of the fried batter.

Adding dried oregano and garlic to the marinade

Because the fish isn't coated in rich frying oil, it needs a bit of help in the flavour department. A quick rub of garlic and oregano brings that punchy Greek profile to the surface and distracts from the missing fat.

What it costs you. So: more of a marinated grill. A traditional pure fried fish was never on the table once the fat came out. Purists might roll their eyes at the herbs, as truly fresh fish usually stands alone.

The method is in the book

I miss the crunch of the floured, fried skin. I really do. That texture is legendary for a reason. But the grilled version is fantastic in its own right. The charred skin carries a brilliant bitter edge, and the meat stays sweet and firm.
