What the traditional version is
Wholemeal dough wrapped around a spiced, mashed potato filling, rolled flat and shallow-fried in a heavy pan with terrifying amounts of ghee until crisp, golden and heavily blistered.
What changed, and what each change costs
250g of potato for 400g of chicken breast
You can't eat bread stuffed with root vegetables and expect to hit any reasonable nutritional target. Swapping a massive chunk of the spuds for finely diced lean poultry gives the bread real substance and turns it into a complete meal.
What it costs you. This is a meaty, chunky flatbread. Nobody is going to mistake it for a uniform, pillowy potato experience anymore. You lose that perfectly soft starch texture in the centre.
120g of ghee down to 15g of ghee
Traditional recipes essentially deep-fry the bread on a flat griddle, soaking up huge amounts of fat. A dry-toast in a hot pan followed by a tiny brush of oil achieves the same blistering without the swimming grease.
What it costs you. You miss out on that ultra-rich, buttery aroma that fills the kitchen. The crust is noticeably drier and lacks that dripping, golden sheen.
400g of atta down to 300g
Using less dough forces you to roll it thinner to encase the larger volume of filling. This shifts the ratio heavily in favour of the spiced meat and potato centre, rather than just eating mouthfuls of plain bread.
What it costs you. Rolling a thinner dough around a chunky meat filling is vastly more annoying. You'll get blowouts, and bits of chicken will absolutely poke through the surface.

You've got to accept a bit of structural chaos to make this work. The chicken makes the filling much harder to contain, but the trade is entirely worth it. I stripped out the heavy clarified butter and slashed the starch, leaving you with a sharply spiced flatbread that actually acts as a proper dinner.
