What the traditional version is
Whole corn tortillas flash-fried in a heavy pan of hot lard, topped with eggs fried in the remaining fat. Served with mashed pinto beans cooked down with more lard, covered in a fresh tomato and chilli salsa, and finished with fresh coriander.
What changed, and what each change costs
40g of lard swapped for zero fat
Lard adds a massive amount of fat to the pan. Dropping it entirely and relying on dry heat for the tortillas and water for the eggs saves hundreds of calories. The protein from the eggs and the beans stays completely intact.
What it costs you. You lose the deep, savoury pork flavour that lard brings to a dish. Your beans will taste a lot less rich, and the tortilla will be toasted rather than properly fried. It's the first textural shift you'll spot, because a dry tortilla snaps differently to a fried one.
Fried eggs swapped for poached eggs
Poaching gives you the exact same runny yolk and soft white without needing a pool of oil to cook it in.
What it costs you. A poached egg is very polite. You can't replicate the crispy, lacy, browned edges that you only get from cracking an egg into smoking hot fat.

This is a fantastic breakfast, but This is a practical morning meal. Nobody is going to mistake it for a traditional rancher's feast. You've got all the sharp, bright flavours of the freshly made salsa and the comforting bulk of the mashed beans, without feeling like you need a nap afterwards. The poached eggs do the job perfectly, even if I miss the crispy edges of a fried egg. It hits the spot nicely.
