What the traditional version is

Proper candied yams are thick discs of sweet potato, simmered or baked in a hefty bath of melted butter, soft brown sugar, and a touch of cinnamon, sometimes with marshmallows lobbed on top for good measure. The syrup seeps into the potato until it tastes more like pudding than anything you'd serve with dinner.

What changed, and what each change costs

Butter and 150 grams of brown sugar for absolutely none

Every gram of that gloss is just fat and sugar. The potato is already sweet, so if you roast it long and slow, the natural sugars start to caramelise and give you a bit of the sticky edges without needing a sugar bath.

What it costs you. Here's the kicker: it's not candied anymore. No sticky glaze, no puddles to mop up. This is just roasted sweet potato. It's tasty if you like sweet potatoes, but don't expect anyone to fight over the last bit.

A single roast with minimal oil for the butter bath

Baking the sweet potato uncovered lets it concentrate and caramelise, helping you get a bit of that dark edge. A trace of olive oil lets the edges crisp.

What it costs you. You swap buttery gloss for something healthier, but you lose that melting, silky feeling you only get from a butter-soaked side.

Just salt and cinnamon, no marshmallows or extra spices

It keeps the dish simple and lets the sweet potato do the talking. Cinnamon brings back a hint of the original - but don't expect a pudding.

What it costs you. There's no showy, spiced aroma hitting you, just a whiff of cinnamon when you first open the oven.

If you want the syrupy, pudding-like side you remember, I can't help you - roasted sweet potatoes are honest and useful, but they aren't fooling anyone around the Christmas table.
