Dirty Rice

What the traditional version is
Classic dirty rice starts with 200g of minced pork and 150g of chicken livers, fried in 100g of vegetable oil until browned and crumbly. You add 200g of onion, 100g of celery, 80g of green pepper, and cook until soft, then stir in garlic, paprika and plenty of black pepper. Finally, tip in 400g cooked long-grain white rice and mix to coat every grain with the seasoned fat and meaty bits. Finish with chopped parsley. The oil and pork fat are what make dirty rice more than just rice with stuff in.
What changed, and what each change costs
Minced pork and chicken livers to turkey mince, plus a token chicken liver
Turkey mince is much lower in both fat and calories, but you lose the punch of rich pork and the irony depth from a full load of liver. A small bit of liver keeps the soul of the dish alive without sending the fat through the roof.
What it costs you. It's not the same - there's less of that meaty, savoury funk. If you eat dirty rice mainly for the livery kick, you'll miss it. But for most, the compromise gets you close enough that no one will riot.
100g vegetable oil to 10g plus a non-stick pan
Most of the oil just slicks the rice, so using a good pan does the job with a fraction of the fat. You still need a little to round the edges and carry the spices.
What it costs you. The rice isn't as glossy or satisfying to stir, and you won't get that classic coating. But you keep the veg and the meat front and centre, so it's hardly a tragedy.
Reduce rice from 400g to 300g
You keep the rice flavour and texture, but more of the bites are packed with meat and veg, not just starch.
What it costs you. Purists might sulk if their spoon isn't piled high with rice, but you'll taste more of what's in the pan. The dish actually looks better - more colourful, less like canteen rice.
Boost parsley and paprika for punch
With less fat to carry flavour, you need a bit more spice and greenery for freshness and bite.
What it costs you. If you like subtle, you might find this version a bit up front. If not, carry on.

The method is in the book
You lose the deep, slick, porky richness - the thing that made the original so moreish. But you'll notice you can eat a proper helping of this and still move afterwards. It's not the same, it's brighter and a bit fresher, and you still get enough of the livery note to call it dirty rice with a straight face. No one will write poetry about your rice, but nobody will need a nap either. If you crave the classic fat-glossed grains, you'll have to book a flight to Louisiana and do penance after.
