What the traditional version is
The classic prawn Creole starts with 80g of butter, melted in a heavy pot. In go chopped onion, celery, and green pepper, cooked on low heat until they're soft but not brown. Garlic, a heap of tinned tomatoes, and tomato puree follow, along with bay leaf, black pepper, and a decent pinch of cayenne. 600g raw prawns join towards the end, simmered just till pink. Serve ladled over a mound of white rice, finished with parsley and maybe even more butter spooned on as it hits the table. The sauce is glossy, thick, and rich, because butter is the first and last ingredient.
What changed, and what each change costs
Butter swapped for a drizzle of vegetable oil
Butter is what gives Creole sauce its glossy finish and makes the vegetables collapse into velvet. Swapping it for just 18g of oil keeps the calories low but doesn't do the sauce any favours visually.
What it costs you. You lose that glassy gleam and the rounded mouthfeel. The vegetables taste right, but the sauce doesn't cling or shine quite the same. You'll notice if you grew up with the classic.
Added prawn stock for depth
Without the cushion of butter, the sauce risks tasting flat. Simmering prawn shells with water and a pinch of salt gives you a quick stock that brings back some savoury depth.
What it costs you. It's extra washing up, but the flavour pays you back. Still, it isn't richness - it's just more prawn.
Rice dropped to 40g per serving
Traditional Creole is all about the rice, but if you want more prawns per bite, cut the portion and keep the sauce as the star.
What it costs you. It looks slightly mean, but once your fork's chasing prawns instead of rice, I doubt you'll mind for long.

The method is in the book
You get plenty of prawns, lots of sauce, and a punch of classic Creole flavour. The missing butter is obvious if you know what you're looking for. The sauce clings, but it doesn't gleam, and the mouthfeel is lighter. Still, the taste hits most of the marks - the prawns are the main event now, not the sauce. If you want to go all the way, don't pretend this is as luxurious as the original, but embrace it for what it is: bright, light, and tomato-forward with all the prawns you can eat.
