Chicken Spaghetti

What the traditional version is

The classic casserole starts with 300g dried spaghetti, boiled until soft. Add 400g cooked, chopped chicken (thighs for preference), two tins (800g) of condensed mushroom soup, and melt through 350g of processed cheese. Some folks chuck in a handful of tinned pimentos or peas. Bake it all together until bubbling and golden (or at least as golden as processed cheese ever gets). The sauce is thick, sticky, and tastes of salt and nostalgia.

What changed, and what each change costs

Processed cheese and tinned soup are where most of the calories, fat, and salt come from. Instead, I make a thin sauce from skimmed milk, cornflour, and a smaller amount of strong cheddar. The cheese is there for flavour, not to smother everything in orange plastic.

What it costs you. You lose the sticky, clingy texture. The sauce is thinner and doesn't coat the spaghetti in the same way. If you want that Velveeta gloss, this won't do it.

Chicken thigh to chicken breast

Chicken breast gives you more protein per bite and less fat. The trade: you have to keep an eye on it or it'll dry out.

What it costs you. Flavour drops slightly and the chicken isn't as rich, but with less fat swirling around you notice the actual chicken, not just soup and cheese.

Dried spaghetti down, chicken up

Cutting the pasta makes room for more chicken, which means less starch, more bite, and a dinner that'll actually keep you full.

What it costs you. The bake looks less like a brick and more like a pasta dish. If you miss the bulk, pile your plate higher - no need for seconds.

Skimmed milk and cornflour instead of cream soup

Skimmed milk has barely any fat, and the cornflour thickens it without turning the dish into wallpaper paste. The mushrooms go in fresh so you get flavour instead of grey goo.

What it costs you. You'll taste the actual mushrooms, not just salt. The sauce is more honest, but it isn't quite the same old gloop.

The method is in the book

If what you want is the molten, rubbery comfort of processed cheese, this is a disappointment. But if you like actual chicken, the baked spaghetti with a lighter, mushroom-forward sauce is a step up for flavour and doesn't leave you with a grease lake at the bottom of the tin. The sauce is looser, but you can always eat it with a spoon. It's not fake nostalgia, it's just good food on a Tuesday.
