What the traditional version is

Hot-smoked herring fillets, briefly jugged in boiling water, lifted onto well-buttered thick-cut white toast. Finished with a squeeze of lemon, if you're feeling flush, and maybe some black pepper.

What changed, and what each change costs

White bread swapped for wholemeal, 2 thick slices (100g) down to 2 thin slices (60g)

The bread is just a raft for the fish. You still need something to catch the juices, but you won't miss the doughy slab.

What it costs you. You'll notice it's not as soft and pillowy as the original. There's more texture here, and slightly less toast to mop up the kipper juice. But you get a nuttier flavour and a bit more fibre, so it's not pure loss.

Butter halved from 30g down to 15g

Butter is where the damage is. Less of it means fewer calories, and the smokiness of the kippers doesn't need as much fat to shine.

What it costs you. The richness drops off, and you lose that thick, glossy finish on the toast. If you're here for maximum luxury, the traditional is the one. But the kippers themselves still do the heavy lifting.

Kept the full portion of kippers (200g) - no reduction

This is the first recipe where I haven't cut the protein at all. The smoked fish is already the hero and doesn't need fiddling. Trying to pad it with beans or yoghurt would be madness.

What it costs you. None at all, unless you count your house smelling like kippers for the rest of the morning.

Added a squeeze more lemon (10g up to 15g)

With less butter, you want a bit more sharpness to balance things out. Lemon does that without adding anything heavy.

What it costs you. You'll need to actually buy a lemon, if you don't always have one lurking in the fridge. Hardly a hardship for most.

The method is in the book

This isn't one where I've turned the world upside down. It's still kippers, still on toast, still deeply British. The toast is thinner and the butter lighter, so you lose some of that old-school breakfast decadence, but the smoky kipper stands front and centre.
