Forty years as a punchline, most of it unfair. The weight sits in four beloved places: pastry is a sponge, the roast is a system for cooking things in the fat that came out of the meat, batter exists to hold oil, and the puddings are Victorian. Only two dishes did not survive.

The ones I wouldn't touch
Dishes drafted for this book that didn't survive. If every dish survived lightening, that chapter would be a marketing device and you should trust none of the rest.
Roast breast of lamb
I can't do it. Breast of lamb is built out of fat, and that's the joy. Once you take away the fat, you're left with a splintery fence of bones and a tiny strip of meat tighter than my budget. You can't raise the protein per bite without losing the only bit anyone actually eats. If you want a roast that eats like lamb but sits lighter, try a leg or shoulder, trimmed. But breast? Leave it as it is or pick something else. Some dishes just refuse to be tamed.
Oxtail stew
You can't make oxtail stew "lean" and keep what makes it worth eating. There's no such thing as lean oxtail - the fat and gelatin are the whole point, and skimming them out or using a different cut just leaves you with regular beef stew. You could swap to beef shin or cheek for a bit less fat, but then it's not oxtail stew any more, so you're just lying to yourself and your dinner guests. If you're after high protein and low fat, this one's best as a special treat, not reinvented. Order something else off the menu.
