What the traditional version is
The classic sticky toffee is a soft, dark date sponge made with plenty of softened butter, brown sugar and eggs, soaked in a sauce of double cream and more dark sugar.
What changed, and what each change costs
Less butter in the sponge, half the usual amount
Sticky toffee sponge gets most of its richness from butter, but you don't actually need all of it for the right texture. Cutting it down still gives you a decent crumb.
What it costs you. You lose that melting, almost fudge-like texture. It's more cake now, less like eating a toffee cloud. Still sweet, still soft, but you'll notice.
Swap double cream in the sauce for evaporated milk
Double cream is non-negotiable in the original sauce. Evaporated milk is much thinner, but it holds up to boiling and gives you some of the same dairy hit for a fraction of the calories.
What it costs you. Don't expect the sauce to coat the back of a spoon or set in little sticky pools. It'll run to the edges of the plate and soak in fast. You're getting flavour, but not the gravity-defying gloss.
Cut sugar in sponge and sauce by a third
Dates are almost offensively sweet, and the original recipe doubles down with piles of sugar. Cut some out and you'll still get plenty of caramel, but the dates have to do more of the talking.
What it costs you. Not quite as sticky or tooth-achingly sweet. If your fillings twinge at the memory of the proper stuff, you'll probably approve.
Small tweak: add a bit more baking powder
With less butter weighing things down you need a little more lift to avoid a solid lump. A pinch more baking powder lightens things up.
What it costs you. You get more air, less density. The original is meant to feel heavy and decadent; this one might even pass for a lunchbox cake if you dress it down.

The method is in the book
The first mouthful tells you what's changed. The sauce's thinner, the sponge is lighter, and you don't get the same unholy richness - but it's still sticky toffee in spirit. If you miss the feeling of regret and nostalgia that comes from scraping the last bit of sauce off the plate, this won't quite deliver. But you'll get the flavour, a nice sticky sponge, and you can still have seconds and not pass out on the sofa. If you're desperate for that deep toffee chew, find the nearest pub and don't look at the nutrition posters.
