What the traditional version is

Chicken thighs left in their skin, coated in a heavy wheat batter and plunged into a deep fryer until golden. The crispy nuggets are then tossed in a sticky sauce built entirely on white sugar, orange juice and soy.

What changed, and what each change costs

600g of fatty chicken thigh and a deep fryer for lean chicken breast baked on a wire rack

Chicken breast is pure muscle, stripping out the heavy fat load of skin-on thighs. Baking it instead of frying it cuts the oil completely.

What it costs you. Breast meat dries out much faster than thigh meat. You lose the rich, fatty mouthfeel, and the crunch is far less aggressive.

100g of white sugar down to 30g of soft brown sugar

Takeaway orange sauce is basically hot jam. Cutting the sugar leaves a sharper, cleaner citrus flavour while the molasses in the brown sugar provides depth.

What it costs you. You lose that thick, glossy candy shell that coats the back of a spoon. You end up with a light dressing. The version that's a sticky syrup anymore is still out there and still better.

Thick flour batter acts like a sponge for frying oil. A light dusting of cornflour gives the sauce something to cling to without holding the fat.

What it costs you. The chicken pieces look smaller on the plate, and you miss out on that soft, spongy layer between the crisp shell and the meat.
