What the traditional version is
Pork and beef mince (nothing lean), mixed with rice, onion, parsley, mint, tomatoes and a big pour of olive oil. The rolls simmer gently, covered in more oil, lemon juice and water. The leaves go tender, the filling steams and soaks up every bit of flavour.
What changed, and what each change costs
500g of fatty mince to 400g of lean pork mince
Traditional koupepia lean hard on pork shoulder and beef mince. I swap it out for 5% pork mince and drop the beef.
What it costs you. The first bite is the biggest difference. You lose the rich, dripping filling and some depth. On freshness, though, it's better. You can actually taste the herbs now.
Rice cut from 150g to 60g, and doubled the herbs
Rice bulks it out, but it doesn't bring much else. Using less means the meat and herbs move to the front of the queue, and it's almost twice the protein per roll.
What it costs you. You lose a bit of that pillowy texture, and the filling is firmer. There's still enough rice to hold it together.
Olive oil in the pot, down from 80g to 25g
The oil does two jobs: it keeps the rolls moist, and rounds out the flavour. You can't really get rid of it all, but 25g is enough to stop things sticking and add a hint.
What it costs you. This is the one that hurts. You'll notice the lack of lushness on the lips. But the lemon and soft leaves keep things interesting.
Omitted the beef entirely
Beef is there for roundness and a bit of chew, but lean pork can stand alone if you season well and go heavy on the herbs.
What it costs you. You might miss the beef if you're used to the full-fat version, but pork actually works better with the fresh mint and parsley, so it's a fair trade.

The method is in the book
Let's not pretend this is the same dish you'd get at Yiayia's. It's fresher, meatier and you can eat a full plate without slipping into a food coma. The rice-light, herb-heavy filling is the first thing you notice. You give up the glistening shine of a pool of oil, but you hold onto the essentials. If you want the full effect, do it the old way for a feast day. But for a meze spread on a Tuesday night, these are more than good enough.
