What the traditional version is
Halloumi sliced thick, dusted with a little plain flour if feeling fancy, then fried in a generous glug of olive oil. The cheese forms a golden crust, the oil deepens the flavour, and every bite is both squeaky and unashamedly salty. Usually dumped onto a plate with a lemon wedge and eaten far too quickly. No one's ever stopped at one piece.
What changed, and what each change costs

The cheese itself does the heavy lifting here. Halloumi throws out enough fat as it cooks. All the oil does is add calories (and a slightly richer finish) - not enough to justify pouring it in.
What it costs you. You don't get as thick or shiny a crust, and you lose that bit of oil-soaked edge. But the cheese tastes cleaner, the kitchen doesn't fill with smoke, and it's still crisp on the outside if you don't crowd the pan. If you're nostalgic for greasy fingers, I can't help you.
Portion size down from 100g to 70g halloumi per person
Let's not pretend this isn't about the cheese. The traditional plate is a brick-sized slab, but most people would do better with less - you still get all the punch, but you're less likely to need a lie-down. And it means you can go back for seconds if you fancy.
What it costs you. No tricks here - it's just less cheese. But you won't feel short-changed, especially if you serve it with a salad or, let's be honest, more bread.
Leave out the flour dredge entirely
It's there for a slightly thicker crust, but honestly, the cheese browns perfectly well without it. One less thing to wash up, and one less ingredient with gluten.
What it costs you. You miss out on a bit of crunch, and if you're a traditionalist, you might sulk for a minute. But the difference is minimal if you get the pan hot enough.

The method is in the book
The original is greasier and crispier, sure, but I honestly prefer it this way. You can actually taste the cheese, and you won't set off the smoke alarm every time you make lunch. The portion cut hurts a little if you're used to spoiling yourself, but it means you can justify making this twice a week instead of once a month. If you want perfection, go book a flight to Larnaca - but for a weekday, this is as good as halloumi ever needs to be.
