What the traditional version is
Medium courgettes, hollowed out and stuffed with a mix of lamb mince, onion, rice, olive oil, parsley, mint, a bit of tomato and plenty of seasoning. Everything gets simmered gently in a garlicky tomato sauce, with the rice swelling up and the courgettes turning soft and fragrant.
What changed, and what each change costs
120g white rice out, 250g reserved courgette flesh in
Rice is the second thing in the stuffing, but it's only there to bulk out the meat. Use the courgette you already hollowed and suddenly you're eating double veg, not double starch. It's not rice, but you're not left hungry.
What it costs you. You lose the starchiness and the way rice holds everything together. The filling's looser and you might get a stray bit of mince falling out. If you want the rice back, add it - just don't look at me.
Lamb mince swapped for 400g 5% fat beef mince
Lamb's lovely, full of flavour, and full of fat. Using lean beef keeps the protein, cuts the fat, and still gives you a proper meaty filling. You do lose that lamby aroma but it's not like you're serving this to the archbishop.
What it costs you. You miss the deep lamb flavour and some of that luxurious texture. You're eating it for your arteries, not your nostalgia.
Olive oil cut from 60g to 15g
Most Cypriot mums let the olive oil flow. I use just enough to soften the onions and brush over the courgettes before they bake. You're not frying chips here.
What it costs you. Less richness in the sauce and less gloss on the veg. If you like licking the plate for that last dribble of oil, you'll find it a little less rewarding. If you're not, you won't mind.
Up the herbs: parsley to 30g, mint to 10g
If you take away rice and lamb, you've got to put something back. More herbs mean it still smells and tastes of Cyprus. If you're not heavy-handed here, don't bother.
What it costs you. Not much to grumble about unless you hate green things. It's fresher and a bit more vibrant.
Tomatoes tinned increased from 400g to 600g
With the rice gone, the sauce needs boosting. More tomato means more moisture and flavour to soak into the filling.
What it costs you. A touch more acidity, and the courgettes are swimming rather than reclining. Not the worst thing on a hot day.

The method is in the book
I won't lie and say it's more comforting without the rice. You lose that starchy glue. But the trade is a plateful with more meat, more herbs, and far fewer calories hanging around. Nothing old-fashioned about it. Just honest. You'll miss the lamb a bit, especially if you grew up eating this, but as Tuesday night dinners go, it's not suffering. The extra herbs, the hit of tomato and the bite of courgette still give you that summer feeling. If you want the original, you know exactly what to do.
