What the traditional version is

Kalamari sta karvouna is as simple as it gets: fresh squid, cleaned and cut into rings or left whole if they're small, marinated briefly in olive oil, lemon juice, garlic, and dried oregano. Then it's straight onto a blistering-hot grill, just until it's charred and springy. Served immediately with more lemon, maybe a pinch of salt, and a cold beer. No batter, no fuss, just pure squid with a whack of lemon and herbs.

What changed, and what each change costs

Olive oil down from 40g to 15g, lemon juice up to 50g

There's nowhere to hide: this dish is already lean. Dropping the oil saves a few calories and keeps the protein riding high. Upping the lemon juice means the marinade gets sharper, but the real game is just leaving more oil aside for a good beer later.

What it costs you. The squid won't get quite as glossy, and you'll miss a bit of that roundness from the oil. The lemon and oregano still punch through, and the grill does the heavy lifting for flavour. You might have to give up on those hopeful grill marks if your barbecue's on the feeble side.

Increase squid from 600g to 720g

If you want better protein, give yourself more actual squid and less marinade puddling at the bottom. You're not going to get fatter eating six more rings of squid, and it's more filling this way.

What it costs you. It won't make the marinade go as far, so I give the squid a bit less time in it before grilling. You get a firmer result, and you'll have to work harder to avoid overcooking. But you don't lose any of the main point: grilled squid, lemon, a bit of smoke, and not much else.

The method is in the book

This is one of those rare ones where you can improve the nutrition without ruining a single thing. The original already gets it right: fresh, lean, and all about the seafood. The swap to less oil and more lemon won't make anyone weep. In fact, you'll probably feel smug until you look at your shirt and find a streak of squid juice you missed.
