What the traditional version is
One whole sea bream per person, gutted and descaled, brushed inside and out with olive oil, salted, stuffed with lemon slices and parsley, then grilled over charcoal until blistered outside and just cooked through. Served with more olive oil and a squeeze of lemon, plus plenty of bread for dunking in the juices.
What changed, and what each change costs
40g olive oil down to 12g, just enough to stop the fish sticking
The sea bream is already a delicate, fatty fish, so you don't need to drown it in oil. A little goes far if you brush it on right before grilling. The drizzle at the end isn't missed as much as you'd think.
What it costs you. You lose that rich, oily pool under the fish you'd normally wipe up with bread. The skin isn't quite as crisp, but you won't notice if you don't wander off and let it burn.
Bread out entirely; grilled courgette, aubergine and pepper in instead (600g veg total)
Bread's not bringing much to the table except for soaking up oil and fishy juices, and it drags down the protein. Charred veg bulks up the meal with more fibre and a bit of sweetness.
What it costs you. The original lets you pretend you're being healthy, then you eat half a loaf. Here you'll actually be healthy, but you might miss the ritual of bread-mopping. Grab a fork. Or eat with your hands and sulk quietly.
Extra lemon juice bumped up to 60g for a bigger hit
If you're missing richness, slap on more acid. It's old chef logic: lemon covers a lot of sins, and sea bream loves it.
What it costs you. It's brighter and sharper. Anyone who wants more oil can bring their own bottle and argue with me at the table.

The method is in the book
I'm not going to tell you this is a groundbreaking reinvention. Original tsipoura is close to perfect and never needed saving. The only crime here is taking away your bread, and for that, I'll apologise. You're left with more fish, less oil, much more veg, and a sharper lemon finish. You might even taste the sea bream, not just the olive oil and toast. Anyone who says that's a bad deal can go and grill a sausage.
