Mousse au Chocolat

What the traditional version is
A heavy block of dark chocolate melted down with double cream and butter, then enriched with egg yolks and sugar. Whipped egg whites are folded through at the end. It sets in the fridge into a dense, heavy paste that coats the back of your spoon and the roof of your mouth.
What changed, and what each change costs
150g of double cream and 50g of butter for 200g of fat-free Greek yoghurt
The rich texture in the classic dish comes from three sources: cocoa butter, dairy butter and double cream. You really only need the fat from the chocolate to carry the flavour. The yoghurt brings a sharp, acidic tang that cuts through the bitterness and provides bulk without the crushing weight.
What it costs you. You lose that thick, velvet finish that pure dairy fat provides. The yoghurt brings a distinct sourness that purists will definitely complain about.
Dropping to 2 egg yolks and using 240g of egg whites
Egg whites are basically pure structure. Whipping a massive volume of them gives you a lighter, taller mousse without adding any fat. Keeping a couple of yolks provides enough emulsification to stop the mixture from splitting.
What it costs you. The texture is much more bubbly and transient. It vanishes quickly on your tongue rather than lingering like a dense chocolate ganache.
Cutting the sugar down to 25g
Dark chocolate already contains sugar, and you don't need much more to balance the bitterness. A small spoonful helps the egg whites reach stiff peaks and stay completely stable.
What it costs you. It leans heavily into the bitter, astringent notes of the dark chocolate. If you prefer a sweet milk chocolate dessert, you'll hate this.

This is a light, sharp, massively chocolatey pudding. Nobody is going to mistake it for a solid brick of truffle paste. The Greek yoghurt brings a brilliant tang that actually stops the dark chocolate from becoming overwhelming. I think it makes the whole dish much easier to eat. You get all the intense cocoa flavour without feeling completely weighed down.
