What the traditional version is

Large chunks of tomato and cucumber, sliced red onion, Kalamata olives, topped with a solid block of feta. Drenched in local olive oil and a splash of red wine vinegar, dusted with dried oregano.

What changed, and what each change costs

80g of olive oil down to 30g

Olive oil is pure fat and carries a massive load. The traditional dish leaves a deep puddle of it for dipping your bread into. I'm cutting it back to a strict 2:1 dressing ratio with the vinegar. It's enough to coat the salad, but it won't drown the plate.

What it costs you. You lose the glorious bread dipping experience at the end. The salad feels sharper and slightly less rich. You've got to toss it properly with your hands to distribute the smaller amount of oil across the vegetables.

80g of black olives down to 40g

Olives are essentially little flavour bombs made entirely of fat. Halving the amount keeps enough scattered through the bowl so you still get a sharp hit of salt every few bites, but strips out a chunk of the fat load.

What it costs you. You won't get an olive in every mouthful. You have to hunt for them a bit. It's a visual loss as much as anything, as the bowl looks a bit greener and redder without all those black dots.

So: a sharp, fresh Tuesday dinner that won't ruin your week. The soaked, oily masterpiece you get in a seaside taverna was never on the table once the fat came out. The feta still provides the rich, salty hit you want, and the tomatoes still sing. You just can't drink the bottom of the bowl. Make sure your tomatoes are at room temperature before you start, because cold tomatoes taste of nothing.
