What the traditional version is

A mountain of shredded white cabbage, grated carrots and sliced red peppers. It's drowned in a heavy vinaigrette made from huge glugs of olive oil, crushed garlic and red wine vinegar. The vegetables are tossed and left to soften for hours until the oil penetrates the harsh fibres of the raw cabbage. It's served as a bright, oily side dish.

What changed, and what each change costs

120g of olive oil down to 20g

Raw cabbage needs fat and acid to soften, but 120g of oil is absurd for a salad. I cut it right down. A smaller amount of oil mixed with the vinegar and massaged aggressively into the leaves does the exact same job of breaking down the tough fibres.

What it costs you. You lose that rich, velvety mouthfeel that coats your tongue. The dressing feels much sharper and thinner, which means the raw vegetables bite back more.

Adding 600g of poached chicken breast

A plate of raw winter vegetables is not a meal. Adding lean chicken breast fixes the balance entirely, turning a side dish into a main. The shredded meat acts like a sponge, absorbing the sharp vinegar dressing beautifully and carrying the garlic flavour.

What it costs you. It stops being a simple side salad and becomes a full lunch. Chicken breast can easily dry out if you overcook it, and it changes the texture of the dish from entirely crunchy to something softer.
