What the traditional version is
A thick block of hard, salty Greek cheese like kefalotyri or graviera. The slab is dipped in water, dragged through plain flour, and fried in a generous pool of hot olive oil until a rigid crust forms. Often finished with a splash of brandy and a squeeze of lemon juice while the fat bubbles.
What changed, and what each change costs
Flour and olive oil down to a dry frying pan
Frying cheese in oil adds massive calories to an ingredient that's already incredibly dense. Dry-frying forces the natural fats inside the block to do the work instead, stopping it from absorbing extra liquid.
What it costs you. You lose the crispy, oil-soaked shell that makes the original so addictive. What you've got is just seared dairy. A battered triumph is a different dish and you know where to find it.
Traditional Greek frying cheese swapped to halloumi
Authentic saganaki uses kefalotyri. Finding that in a British supermarket is a total nightmare. Halloumi is the obvious substitute because it holds its shape perfectly under intense heat without melting into a useless puddle.
What it costs you. Halloumi squeaks. You can't expect the yielding, gooey centre of a proper Greek graviera, because halloumi has a very firm, rubbery texture.
Flaming brandy down to just a squeeze of fresh lemon juice
Lighting a pan of cheese on fire looks brilliant on holiday. At home, you are just burning alcohol for the sake of it, and it does absolutely nothing for you. A sharp hit of citrus cuts through the fat much better.
What it costs you. There's no dramatic presentation and you lose that faint, sweet background note of burnt alcohol. Your kitchen will be distinctly lacking in theatre.
