What the traditional version is

Chunks of aubergine are deep-fried in olive oil until they are completely collapsing, then folded into a thick, sweet and sour stew of celery, onions, tomatoes, capers and olives. The sauce is heavily sweetened with caster sugar and sharpened with red wine vinegar to create the famous agrodolce flavour.

What changed, and what each change costs

1kg of deep-fried aubergine holds a staggering amount of oil. Swapping to roasted fresh aubergine strips out well over 1,000 calories of fat from the bowl.

What it costs you. You lose that unbelievable, jammy silkiness that only deep-frying delivers. Roasted aubergine is very good, but it simply has a bit more chew and less rich mouthfeel on the tongue.

60g of caster sugar down to 30g

The traditional agrodolce sauce uses a lot of sugar to balance the sharp vinegar. Halving the sugar saves straight carbohydrates without losing the essential character of the dish.

What it costs you. The balance shifts quite noticeably. It leans harder into the sour vinegar note. I like the sharper edge, but you'll definitely notice the missing syrupy sweetness.

This is a sharper, much lighter plate than the heavy Sicilian classic. A bright and punchy vegetable salad, then. Not a rich, oily stew, and I'm not going to pretend otherwise.
