What the traditional version is

A light, airy sponge cake baked plain, pierced all over with a fork, and drowned in a thick mixture of sweetened condensed milk, evaporated milk and double cream. Once it absorbs the lot, it gets blanketed in sweetened whipped cream.

What changed, and what each change costs

600g of double cream swapped for 400g of fat-free Greek yoghurt and 100g of semi-skimmed milk

Double cream is basically pure fat. Using fat-free Greek yoghurt for the topping and semi-skimmed milk to thin the soak slashes the fat while raising the protein.

What it costs you. Yoghurt has a sour tang. You end up with a sharper, denser layer. The version that's a rich cloud of whipped cream is still out there and still better. The topping tastes like breakfast rather than a pure dessert, and you must accept that acidity cutting through the sweet cake.

300g of whole eggs swapped for 150g of whole eggs and 150g of egg whites

The cake needs structure to absorb the liquid without collapsing. Extra egg whites build a firmer, drier sponge that drinks up the milk blend while adding lean protein.

What it costs you. The sponge is less tender and slightly more rubbery when eaten dry. You absolutely must let it soak properly, or it feels like chewing a kitchen sponge. It relies entirely on the milks for moisture.

400g of sweetened condensed milk and 400g of evaporated milk reduced to 200g of condensed milk and 300g of light evaporated milk

The original soak is a syrup. Cutting the condensed milk drops the sugar massively, and switching to light evaporated milk saves even more fat.

What it costs you. The cake is less intensely sweet. The soak is noticeably thinner, meaning it pools at the bottom of the dish instead of suspending perfectly inside the crumb. It feels wetter and less creamy.

The method is in the book

This is a satisfying pudding that keeps the soul of the dish intact. The sponge absorbs the three milks brilliantly, creating that famous wet texture that makes Tres Leches unique. The reduced sugar works in its favour, stopping it from being sickly. The topping is the big compromise. Whipped double cream is luxurious and light. Greek yoghurt is thick, heavy and sharp. The acidity balances the sweetness of the condensed milk, but it changes the dessert entirely. It is a good wet cake, but lacks the pure dairy excess of a traditional bakery slice.
