What the traditional version is

Full-fat quark and plain flour mixed with egg to form a soft dough, cut into diamond shapes, boiled, then tossed in a generous amount of melted butter and sugar, sometimes finished with a little cinnamon. Cloud-like, tender, sweet and far too easy to eat by the dozen.

What changed, and what each change costs

Full-fat quark for fat-free quark

The whole point of leniwe is the cheese, but regular quark brings half the calories as fat. Switching to fat-free means you can have a bigger portion without blowing your plans.

What it costs you. You miss out on the creamy texture and some of the richness. It's more bouncy, less cloud-like, but still tastes of actual cheese.

Cut flour by a third and add extra egg white

Less flour means less starch, so more room for cheese. A spare egg white helps hold the dough together without adding much, and bumps up the protein so you feel you've eaten something.

What it costs you. The dough gets chewier and is a bit trickier to handle - stickier, needs a bit more patience. If you want the classic, you'll just have to flour your worktop and think less about your arteries.

Spray oil and sweetener instead of melted butter and sugar

Melted butter is delicious but spends no time hanging around your body doing anything useful. Granulated sweetener does the job for a few calories.

What it costs you. You lose the shine, most of the smell, and the classic golden puddle at the bottom of the bowl. You notice the missing butter first, and the sweetener straight after.

The method is in the book

The classic leniwe are billowy and sweet and leave you with butter on your chin. This version? You get a proper plateful for a lot fewer regrets later, and the dumplings actually taste of cheese. The pan colour is a decent substitute for a buttery crust, but the sweetener is a compromise: it works, but you'll know you made a swap. If you want pudding without preparing for hibernation, these are worth your time. If you're after the taste of childhood, make the real thing and skip this page.
