Zrazy Stuffed Beef Rolls

339 kcal a serving, against 449 for the traditional version. That is 110 kcal off, or 24%, with 42g of protein. Serves 4. 1 hour 40 minutes.
What the traditional version is
Thinly pounded beef steaks wrapped around strips of smoked bacon, gherkin and a smear of mustard, secured with toothpicks, browned in beef fat, then braised until tender. The sauce is thickened with a bit of flour and some of the beef's own fat, always finished with the beef's rendered drippings. Served with potatoes or buckwheat, this is classic Polish comfort food.
What changed, and what each change costs
Bacon replaced by lean smoked ham
Bacon is there to baste the meat from the inside and add a smoky kick. Smoked ham tastes close but brings much less fat, so you still get savoury and smoky, just not the rivers of molten fat.
What it costs you. You lose the self-basting trick. The beef ends up a bit drier, and the ham doesn't melt like bacon does, so the filling isn't as rich or unctuous.
Rendered beef fat swapped for a little olive oil, braising in veg stock
Frying and braising in beef fat makes the whole thing taste ten times beefier and gives you a glossy sauce. Olive oil is there to stop the beef sticking, and vegetable stock swaps in for the fat bath. The end result's a fair bit lighter.
What it costs you. You won't get the deep, sticky sauce and gloss from beef fat. The sauce is thinner, and the beefy aroma isn't the same, but it still feels proper and savoury.
Extra gherkin, onion and mustard added
If you're losing fat, you need to boost flavour elsewhere. Upping the gherkin, onion and mustard gives a sharper, punchier sauce to distract from the missing richness.
What it costs you. The sauce is tangier and you notice the pickle a lot more - not exactly classic, but nobody's pining for fat when chewing on an extra gherkin.
Plain flour reduced by half
Flour's only here to thicken and doesn't add much besides a few calories. Cutting it down gives a thinner sauce, but the rolls are lighter and still get coated.
What it costs you. The sauce is less like gravy and more like a broth. If you miss the thick finish, go ahead and double it back up - just own it.

The method is in the book
This is Zrazy with the brakes on. You're losing that lip-smacking, beef-fat gloss and the roll isn't basting itself from the inside, but it still tastes like beef and pickles, and nobody ever left the table hungry. The sauce is thinner, the filling's a bit more school dinner than secret restaurant, but you'll get all the classic sharp and savoury notes. It's not as good as the real stuff, but you won't need a nap or a statin afterwards. It's Tuesday Zrazy, and there's nothing wrong with that.
