What the traditional version is

Soft mashed potato dumplings bound with potato flour and egg, shaped with a thumb print to hold rich meat gravy: usually pork or beef roast pan juices thickened with a splash of water and a spoon of flour. Served as a side or, for some, a meal with only bread and pickles for company.

What changed, and what each change costs

The calories in the classic aren't coming from the dumplings, but from all that butter, beef fat and pan drippings in the gravy.

What it costs you. You lose all the meaty stickiness. There's no gelatin here, and the gravy ends up more like a sauce than the sort of glossy puddle you get from a roast. If you close your eyes, you can pretend it's nearly as savoury, but your gran will notice.

Beef stock and added fat swapped for pure veg stock, soy sauce and a touch of yeast extract

Beef stock is protein-rich in theory, but the amounts here aren't enough to do much for you, and the fat content does nothing for the protein side. Yeast extract puts back some umami. A splash of soy sauce darkens the whole thing up.

What it costs you. No getting around it: it simply isn't gravy made with a roast joint. It's still brown and deeply savoury, but you won't have to scrape the fat off your lips afterwards.

Dumpling kept traditional

The dumpling itself is already lean - there's not enough protein to swap in, and anything tinkered with would just make it grim. Sometimes you have to know when to put the tools down.

What it costs you. No cost. Mess with these and you'll end up with glue, not dumplings.

The method is in the book

The dumpling itself comes out just like you remember, because it is just like you remember. The swap is entirely in the gravy - you get bags of roasted flavour and umami, but none of the glossy, meaty lip-coating you get from a proper joint's pan juices. For a Monday night, it does the job, and you can put a roast on the shopping list for Sunday. Your Silesian grandma would roll her eyes, but probably finish her plate anyway.
