What the traditional version is
The classic bologna smoke-out starts with a 1.2kg log of pork bologna (the kind you'd never put in a sandwich unless you were raised on it). The outside is deeply crosshatched, then brushed with 200g of thick, sweet barbecue sauce every 15 minutes as it smokes for around 2 hours. It's served sliced thick, with even more sauce to dip, and usually with white bread on the side.
What changed, and what each change costs
Pork bologna to reduced-fat beef sausage
Pork bologna is high in fat, especially the supermarket versions, and most of that doesn't melt out. Swapping for a large reduced-fat beef sausage (something close to a large beef frankfurter, only leaner) drops the fat and gets more protein per bite.
What it costs you. It isn't bologna, it's a beef sausage, and you'll know it. The smoky, bouncy texture holds up in the smoke, but the extra beefiness is there. You lose some of the pillowy porkiness and that faintly processed nostalgia.
Sweet barbecue sauce glaze to vinegar mop
Barbecue sauce has as much sugar as a bag of sweets. Swapping to a tangy vinegar mop keeps the outside moist, helps the smoke stick, and brings plenty of sharpness to cut through the sausage.
What it costs you. The sugar crust, frankly, is gone. There's no caramelised, sticky bark: just a lightly tangy skin. If you miss that, make peace with it - you can't have it both ways.
White bread cut to 1 slice per person
No one ever needed four slices. Serve one for the sake of the ritual and let the meat do the talking.
What it costs you. If you're here for a bread sandwich with a meat garnish, you'll feel short-changed. But the meat's where the work is, so show it off.
Mustard up, pepper up
With the sweet glaze missing, you need something to punch through the smoke and sausage. More mustard and black pepper helps.
What it costs you. Stronger, sharper, more grown-up taste. If you don't like mustard, you're in the wrong recipe.

The method is in the book
If you've smoked a true bologna chub before, this one will make you nostalgic for the sticky glaze and the slightly shameful joy of biting through caramelised sugar bark. The beef sausage is leaner, firmer, and more serious. The vinegar mop keeps it juicy and makes up for some lost sweetness, but don't expect wonder. If you need the old sticky bark, you know what to do - but if your aim is to eat barbecue without writing off the week, this'll do the job with surprising style. It's not a direct swap, but it holds its own at the table.
