What the traditional version is

The classic: batons of potato fried twice until golden, then topped with crispy-edged fried eggs, yolk still runny, and thick slices of chorizo fried until the fat runs. All of it is piled together and smashed so every mouthful has sharp, peppery grease, crisp potato and soft, rich egg. It's made for mopping up with bread and regretting not quite enough to stop ordering another one.

What changed, and what each change costs

Deep-fried chips swapped for roasted

The fryer's the first thing to go when you want to keep your arteries from waving the white flag. Roasting the chips cuts the oil to a fraction, but you'll never get the same shattering shell or butter-soft centre.

What it costs you. The crunch is honest, not outrageous. You get a golden skin and a roasted flavour, but the texture's closer to a Sunday roast than a chip shop. Don't pretend it's a proper Spanish chip.

Chorizo cut down and fat poured off

Chorizo's where most of the calories and none of the restraint live. Cutting back to 50g per person and tipping away the rendered fat means you still get the kick and colour, not the oil slick.

What it costs you. You lose the main event: the spicy, orange puddle chorizo's meant to throw over the whole thing. It's still chorizo, but it won't coat each chip like the original. If the fat's your favourite bit, you're not going to be satisfied.

Fried eggs replaced with poached eggs

Frying delivers crispy edges, runny yolk and, let's be honest, more oil. Poached eggs bring the protein and the yolk without the extra fat.

What it costs you. Poached eggs have clean, quivering whites and a runny yolk, but lose that crisp, almost lacy edge you get in a pool of hot oil. It isn't the same, but you still get the all-important yolk river.

The method is in the book

Make no mistake: the original is better. Deep-fried chips, eggs fried in oil, and enough chorizo grease to see your reflection are what you want after a night out. This version is tamer, higher in protein per bite, and you can actually stand up afterwards. Still, if you're after the pleasure of the real deal, don't settle - just have it less often. For a Tuesday-night dinner where you want to feel slightly smug, this'll do.
