What the traditional version is

Revuelto de setas is all about soft, rich scrambled eggs with wild mushrooms, bathed in olive oil. You start by sautéing the mushrooms in generous olive oil until they smell of the woods and are golden. The eggs are beaten and poured straight in, cooked gently so they're still trembly, creamy, and just holding together. Good bread on the side, of course, for scooping up every last bit.

What changed, and what each change costs

Most of the richness in the traditional revuelto comes from the oil, not the eggs. You can drop it right down if you use a non-stick pan and don't mind the mushrooms being a bit less silky.

What it costs you. You lose a fair bit of the mouth-coating richness. Mushrooms cooked without a lake of oil are a tad more bouncy and less meaty. If you miss the shine, brush a hint more oil on the bread instead.

Milk added to the eggs, and one extra egg for more protein

A splash of milk in the eggs helps them stay tender without needing oil, and the extra egg bumps up your protein. It also stretches the whole thing so you get a bigger portion for fewer calories.

What it costs you. The scramble isn't quite as creamy - you'll notice a little more wetness, especially at the bottom of the pan. Still, it eats like proper scrambled eggs, just not as heavy.

Bread portion halved

White bread's there for mopping up, but when you're looking to get more out of your eggs and mushrooms, you can do with less carb.

What it costs you. You'll run out of bread before the eggs, not the other way round. It's not a tragedy, but if you're passionate about clearing your plate, bring a spoon.
