What the traditional version is

The classic tapa is dead simple: chunky slices of fresh chorizo, sometimes whole, simmered in red wine until both sausage and sauce are sticky, spicy and deeply coloured. The fat that leaches from the chorizo thickens the wine into a glossy, smoky sauce. Served hot with plenty of bread for the sauce and maybe a few toothpicks to keep it civilised.

What changed, and what each change costs

Classic chorizo in wine is as much about the fat slick as the sauce. By parboiling, you spill out a surprising amount before it ever sees the wine.

What it costs you. You'll lose the unctuous, lip-coating glaze you get from sausage fat melting into the wine. The sauce still stains everything red and tastes of paprika and garlic, but it isn't quite as decadent. Spanish grandmothers will shake their heads if they see you pour the water away, but you won't need a nap after eating.

Lean pork mince added for protein and to fill the gap left by lost fat

Once you've stripped most of the fat out, there's not a lot left to call this a 'main event' by modern standards. Folding in some ultra-lean pork mince part-way through gives back chew and substance, and the wine is happy to welcome more protein.

What it costs you. The mince picks up the wine-and-paprika flavour but won't taste like chorizo, just as a Spanish sausage's sidekick. The texture isn't identical: expect softer, wine-soaked morsels alongside the classic chewy chunks. It won't fool a purist, but bulk is bulk.

Olive oil cut by three-quarters (from 16g to 4g) and only used at the end

You just don't need all the traditional oil when half the fat's already gone. A drizzle at the finish gives you enough sheen for table-appeal.

What it costs you. You'll notice less richness on your lips, but nobody ever ordered chorizo in wine for health points. The paprika and wine still do their job.

The method is in the book

This isn't the sticky, rich, wine-lacquered chorizo you'd get in a Madrid bar at midnight. But if you want the paprika punch and deep red sauce, and you're fine with a leaner plate, this cheats the worst of the fat without turning the whole dish into diet food. The mince is a sidekick, not the star, but you'll be too busy running bread through the sauce to mind. Serve with a glass of something red and let the proper version wait for your next Spanish holiday.
