What the traditional version is

The proper thing is brown lentils slow-cooked with onions, garlic, carrots, potatoes and fat slices of chorizo. The sausage almost melts, releasing spicy fat into the stew, turning it brick-red and silken. Every household will argue about the ratio of sausage to lentil, but the classic version doesn't skimp, and you end up with chunks of chorizo in almost every bite.

What changed, and what each change costs

Chorizo cut from 160g in coins to 40g, diced fine

Chorizo's the heavy hitter on fat and calories. If you try to swap it for lean sausage or, worse, turkey mince, you'll just regret it. I've kept it, but diced it so you get a hint in every spoonful. No one's getting a big greasy slice, but you'll still taste the smoke.

What it costs you. You lose the thick orange puddle of chorizo oil on the surface. The mouthfeel's lighter, and purists will sniff that you've turned it into vegetable stew with meat as a garnish. Not wrong. But better this than no chorizo at all.

Carrots doubled, potatoes cut in half

Less sausage means you need heft from somewhere. Extra carrot gives sweetness and body without weighing you down, and halving the potato tips the balance away from carbs, so the lentils don't get lost.

What it costs you. It's not as starchy-thick, but at least it won't glue your insides together like the full-potato original.

Olive oil down from 24g to 8g

You need a slick of oil for the paprika and aromatics, but you don't need three tablespoons. With less chorizo fat, a smaller hit of oil keeps everything moving, if not exactly glossy.

What it costs you. Less shimmer and richness in the broth. On the bright side, you won't be dabbing oil off your lips between mouthfuls.

Protein up by keeping lentils at full strength

The temptation's to cut the lentils and call it done. Don't do it. They're the thing doing all the heavy lifting on flavour and protein - if you cut them, you're left with salty carrot water.

What it costs you. Nothing you taste: the lentils were always the point. It costs 30 minutes a jar would have saved.

The method is in the book

If you're Spanish, you'll know straight away that this isn't your abuela's stew. You're not going to get slick, spicy oil on your lips, and you'll have to hunt for the sausage instead of being clubbed around the head with it. But what's there is honest, comforting and properly smoky for a lot less regret. If you miss the luxury, add a little more chorizo and call it a treat.
