What the traditional version is

The classic pot: Tolosa beans (if you can find them, or dried black beans as a stand-in), soaked overnight and gently simmered with onion, garlic and maybe a bay leaf. No tomato, no spice - just salt and patience. The finished beans are served with their velvety broth, and on the side come morcilla, chorizo, fatback or pork ribs, and often a heap of pickled green Guindilla peppers. The beans are the star, but the table is a party.

Drop all the sausage and pork sides

These are half the reason people order this at a restaurant, but let's not lie - they're also half the reason it makes you want a nap at 3pm. The beans on their own have plenty going on.

What it costs you. Yes, you lose the smoky, fatty puddle that soaks into the crusty bread. The dish is less of a feast, more of a main, and nobody will mistake it for a Basque celebration meal. But your heart will thank you, and you get to eat it on a Tuesday.

Reduce olive oil from 25g to 10g

A trickle of good oil brings a glossy finish and helps the flavour bounce around. With less, you still get the sheen, just not quite the velvet. The beans hardly care.

What it costs you. It's a touch less luxurious, and the broth coats the spoon instead of clinging. If you want it thicker, mash a spoonful of beans near the end.

Thicken the broth by smashing some beans

Without fatback and sausage oozing into the beans, you'll want a thicker, heartier texture to make up for it. Crushing a ladle of cooked beans into the pot does this, no mystery powders required.

What it costs you. The broth turns more stew than soup. You lose the gleaming, silken liquid, but you gain some backbone. Nobody will feel short-changed unless they're eyeing the missing sausages.
