Arroz con Leche

What the traditional version is
Classic arroz con leche is short-grain rice, slowly cooked in whole milk with a stick of cinnamon, a strip of lemon peel and astonishing quantities of caster sugar. The pudding thickens until the grains are soft and the top is shiny with milk fat. Served warm or cold, it's a big bowl of comfort that's basically a hug disguised as pudding.
What changed, and what each change costs
Whole milk swapped for semi-skimmed milk
Most of the creaminess in proper arroz con leche comes from the fat in whole milk. Swapping to semi-skimmed cuts the calories and the weight, but means you'll have to work harder to get a creamy pudding. Stir religiously so the rice gives up its starch.
What it costs you. Lose the glossy layer of cream on the top and a fair bit of the rich mouthfeel. It's not quite as luxurious but it's lighter on the spoon (and the washing up).
Caster sugar cut from 200g to 130g
200g of sugar in the original is spectacularly sweet, but you really don't need that unless you're stuck in a convent in 1830. 130g is still properly pudding-sweet, without the crash half an hour later.
What it costs you. No sparkling top and a slightly less sticky texture. If you want caramelised notes, you can blowtorch a little sugar over the top before serving, but it's not the same. The monks will survive.
Extra stirring to replace lost creaminess
Since I've pinched the fat from the milk, the only way to get that thick, creamy finish is to keep the rice moving as it cooks. Releases more starch, thickens the pudding, and stiffens your upper arm.
What it costs you. You'll need to stand by the hob and put your phone down. It's a fair trade unless you're desperately bored.

The method is in the book
It isn't a childhood memory, it's a weeknight treat. The traditional version wins on creaminess and shine, no competition. But this one is far from joyless - it's comforting, sweet enough to do the job and genuinely satisfying, especially if you stand by the pan and stir like you care. If you miss the gloss, I won't judge you for sneaking a splash of double cream at the end, but my wallet won't thank you.
