What the traditional version is
The classic tahinopita starts with a soft, white bread dough: plain flour, yeast, sugar, water and a bit of oil. You roll it out into large rectangles, brush on a thick layer of tahini mixed with more sugar, cinnamon, and a splash of water to keep it spreadable. Roll it up, coil it like a snail, flatten, and bake until golden. The best ones are sticky, a bit flaky on the edges, with thick seams of sweet tahini running through.
What changed, and what each change costs
Swap 500g plain flour for 350g plain flour plus 150g gram flour (chickpea flour)
Gram flour bumps up the protein and gives the dough a chewier bite. It's not a magic bullet, but it means every mouthful actually gives you something back besides sugar and white starch.
What it costs you. You lose a bit of that fluffy, all-white crumb and the flavour is ever-so-slightly nuttier - but honestly, with tahini in there, most people won't notice unless you announce it.
Reduce tahini filling from 200g to 120g, and use a thinner layer
Tahini is the soul of this bread, but it's also the fat bomb. Pulling it back means dropping some calories, but the swirl's still there - just less of a flood.
What it costs you. There's no way around it: the original swirl is thicker, silkier and richer. Here, you get a thinner, less luscious stripe, but it's still tahini and sugar on warm bread. You'll survive.
Sugar down from 110g to 70g
Less sugar in both dough and filling, but not so little you feel like you're biting into lentil loaf. You can still taste the tahini and cinnamon, just with less of a cloying hit.
What it costs you. It's less sticky, less shiny on top, and you do lose that full syrupy edge. On the plus side, you don't get a sugar crash an hour later.

The method is in the book
No one ever declared tahinopita a health food, and even after tinkering, that hasn't changed. The original is softer, richer, and that thick tahini swirl is what people remember. With more gram flour and less tahini, you're making a leaner, slightly sturdier bun that gets closer to "filling" and a bit further from "sticky indulgence". But when you want the taste, a cup of coffee and a sense your Lent isn't off the rails, it's still a treat - just one that doesn't leave you needing a lie-down.
