What the traditional version is
The classic mahalepi is made by simmering whole milk with cornflour until it thickens to a soft, spoonable texture. It's poured into shallow dishes, left to set cold, then drowned in a thick sugar syrup spiked with rose-water. Some people add extra sugar to the milk as well, but most of the sweetness is from the syrup. It's a simple pudding, but once that syrup hits your spoon, you know you're in Cyprus.
What changed, and what each change costs
Whole milk swapped for semi-skimmed milk, same amount
There's no hiding this one: I want more protein per bite and less fat. The cornflour gives the pudding its body, so the milk's richness isn't carrying as much as you'd think. Once it's set and cold, you'll barely tell the difference.
What it costs you. The pudding isn't quite as lush. You lose a bit of that roundness whole milk brings, but since it's always eaten chilled from the fridge, nobody's getting a warm, creamy hit anyway. Let's be honest, the rose-water is in charge.
Syrup sugar down from 160g to 80g, and syrup served on the side instead of flooding the dish
This syrup is where the sugar shock lives. Halving it brings the dish back into pudding territory instead of full-on sweet shop. Pour it over at the table so you can control how much you actually want.
What it costs you. You've got a much more gently sweet pudding, and you won't get that sticky syrup pooling at the bottom. It isn't a Turkish delight, it's a summer pudding, so this actually works in its favour.

The method is in the book
If I served you this version blind, you'd just think it's a good mahalepi. The syrup is the first thing you taste, and the pudding is there to carry the rose perfume. Unless you're in the habit of rating milk fat by mouthfeel alone, you'll find this does the job for a fraction of the guilt and absolutely none of the sacrifice. If you really do miss the stickier, sweeter original, you can always sneak more syrup on the side when no one's looking.
