127 kcal a serving, against 177 for the traditional version. That is 50 kcal off, or 28%, with 2.3g of protein. Serves 8. 1 hour, plus chilling.
What the traditional version is
Grape must is boiled down, then thickened with plain flour, sometimes with a handful of almonds or walnuts stirred through. The mixture is cooked until it coats the spoon, poured out to cool, and cut into slabs. Occasionally, you'll see cinnamon or rosewater thrown in, but the base is grape, flour and nuts.
What changed, and what each change costs
Swap 60g of the plain flour for 60g skimmed milk powder
This is the only real move I've got. Swapping out some flour for milk powder nudges up the protein, and the texture stays close. Don't expect a revolution, but it gives you a minor win.
What it costs you. Milk powder changes the set a little, so the palouze is slightly creamier and less glassy. If you're a palouze purist, you'll sniff it out. For most, it just seems a bit softer. It isn't classic, it's a manageable tweak that doesn't ruin the spirit.
Reduce the must by 15% (to 1020g) and add 60g water
Cutting back the must reins in the sugar a tiny bit, and topping up with water keeps the volume the same. With all the sweetness, no one will know unless they're counting grapes.
What it costs you. You lose a fraction of that pure grape punch. If you eat palouze for the intensity, this will feel just a touch lighter. If you're after a sweet finish at the end of a meal, it's still more than enough.
Serve with fewer nuts (20g instead of 40g)
Nuts are lovely, but they don't bring much protein compared to their fat load. I keep a few for texture and nostalgia, not a handful.
What it costs you. There's less crunch, but the palouze itself is still the main event. It's not a disaster. If you're desperate, just eat two pieces.

Palouze is about nostalgia and sugar, not protein. I can't change the rules of grape must. If you want the full whack of Cypriot autumn, make it the usual way, enjoy it, and don't count. If you like a little more protein, my tweaks slip in some milk powder without throwing everything off. Is it better? No, the original's barely touched. But you do get to feel a bit more smug, and possibly justify a second slice.
