What the traditional version is

Strewn threads of kataifi pastry (think shredded filo) brushed generously with melted butter, rolled around a filling of chopped walnuts and almonds, baked till crisp, then soaked in a lemony sugar syrup until everything goes sticky and delicious. Plenty of nuts, more butter than you think is possible, and a syrup so sweet you can feel it in your cheeks. No one bakes this and then frets about the result.

What changed, and what each change costs

Butter down from 180g to 55g, and using just enough to crisp the pastry

Let's not kid ourselves: you can't make kataifi taste like itself without butter. But you don't need to slather it. I brush just enough over the threads to get them golden and crisp, and leave out the 'pour what's left on top' move.

What it costs you. The pastry is crisp but less rich. You miss that deep butteriness that soaks into every bite. No one will be fooled into thinking it's bakery-fresh, but you won't need to sit down after a slice.

Flooding the whole tray in syrup is the traditional flex, but it's also the main sugar payload. I use just enough to glaze and lightly soak the rolls.

What it costs you. You don't get that oozy, sticky pool at the bottom. The rolls are stickier on top and only a little softened. Some purists will sulk, but the rest of us won't miss the sugar crash.

Walnuts and almonds halved, and part-skimmed ricotta (150g) added to the nut filling

Ricotta brings more protein and softens the nut mix so it isn't just sweet rubble. Halving the nuts hurts a little, but you get a similar texture and a lot less fat.

What it costs you. If you're expecting a wall of nuts inside, you'll notice the swap. The ricotta isn't traditional - it's there for the numbers - but it makes the filling fluffier and a bit lighter. It isn't the full crunch, it's a compromise.

The method is in the book

If you grew up with the real thing, you'll spot the difference straight away: less syrup, less fat, lighter filling. The ricotta isn't fooling anyone's gran. But you still get crisp pastry, a sweet tang from the syrup, and enough crunch to recognise what you're eating. This is kataifi for a weeknight, not a festival: all the right smells, half the nap required afterwards. If you're chasing a childhood memory, this isn't quite getting you back there, but it lets you have a slice without needing a lie-down too.
