What the traditional version is

Frikadellen are German meat patties: a 50/50 mix of pork and beef mince, white bread soaked in milk, onion, egg to bind, and generous salt and pepper. The mix is shaped into thick ovals, fried in butter or oil until golden and crisp, and served warm or cold. A big pan of Frikadellen makes an appearance at every family gathering or barbecue. The bread keeps them moist but does not make them light.

What changed, and what each change costs

Pork shoulder with fat and 15% beef mince swapped for lean turkey mince and 5% beef mince

Fat is the other thing to go, after deep-frying. Swapping out fatty pork shoulder and high-fat beef mince for turkey mince and 5% fat beef keeps the texture and brings the protein up without making the patties rubbery.

What it costs you. Pork is tastier than turkey, full stop. The patties lose a bit of that familiar sausagey flavour, but if you season them properly and don't overbake, they won't dry out or taste like a sad turkey burger.

Butter for frying replaced with zero added fat, bake on a rack

You lose the fried crust, but also lose the puddle of rendered fat and butter that soaks into every bite. Baking on a rack lets the excess drip off.

What it costs you. There's no lovely golden edge. The middle is as good as ever, but the mouth wants that crust. Brush with a drop of olive oil if you really must, but it's not in the numbers here.

No change to the bread and milk - keep them

If you ditch the soaked bread you get protein bricks. The whole point is the soft, almost springy inside. I leave it as it is and take the pain on the numbers.

What it costs you. None. This is the non-negotiable bit. Without the bread, you just get dry, dense hockey pucks. No one wants that.

The method is in the book

You lose the frying pan magic, no question. The middle stays juicy, just as it should, but the lack of a crust is obvious. Still, it's a massive upgrade on every turkey burger you've ever eaten, and the protein is through the roof for the size. Swap in a bit of sweet paprika if you want a shortcut to sausage flavour, but the best move is to serve these with lots of strong mustard and pickles to distract everyone from missing the fried edge. Cold the next day, they're actually brilliant.
