What the traditional version is
The purest Frankfurt Gruene Sosse is a cold, tart, creamy sauce made from quark, a splash of soured cream, and a giant heap of seven fresh herbs (borage, chervil, cress, parsley, sorrel, chives and salad burnet). It's usually served with waxy boiled potatoes and plenty of hard-boiled egg. Sometimes people add mayonnaise or even double cream to the mix, but the classic relies on quark and sour cream for its creaminess.
What changed, and what each change costs
250g soured cream for 250g fat-free Greek yoghurt
Soured cream is the first thing to go. Quark is already low-fat but soured cream is not. Fat-free Greek yoghurt brings the same sharp tang and a solid hit of protein, but none of the richness.
What it costs you. You lose the satiny mouthfeel and a bit of the luxury. The sauce feels a little leaner, a bit less lush. But the herbs have more room to shout, which is the point.
900g boiled potatoes for 700g steamed green beans
Boiled potatoes seem harmless until you clock the carb load. Green beans are low-calorie, have all the bite, and they don't steal the show from the sauce. And yes, I know it's not the same.
What it costs you. If your childhood memory of Gruene Sosse involves sopping up sauce with fluffy potato, you'll feel robbed. This is fresher and greener. Nobody is going to mistake it for quite as comforting. But you get far less starch and a more vegetable-heavy plate.

What it costs you. No cost at all. Anyone suggesting you remove the egg does not understand the dish and should be ignored at family events.

The method is in the book
The sauce is fantastic - fresh herbs in a creamy base still taste like spring, and the extra protein from the yoghurt is a bonus. Swapping the potatoes for green beans isn't traditional. It's greener, sharper, and a bit less filling. If your mum made it the proper way, have a word with her before telling her what I've done. But you still get a pile of eggs, a mountain of herby sauce, and a plate you can finish without rolling away from the table.
