What the traditional version is
Layers of filo pastry saturated with melted butter. A dense, rich filling made from whole milk, double cream, fine semolina, loads of sugar and egg yolks. The whole tray is soaked in a thick syrup made from equal parts sugar and water until it reaches maximum density.
What changed, and what each change costs
Whole milk, double cream and yolks down to semi-skimmed milk and egg whites
Yolks and cream carry huge amounts of fat. I use semi-skimmed milk and bulk out the custard with egg whites. They set the semolina firmly and drive the protein up.
What it costs you. You lose that pale yellow richness. The custard is paler and a bit bouncier, missing the silken texture of pure fat.
150g of butter for the pastry down to 30g
Filo needs some fat to crisp up, but drenching every single sheet is overkill. I melt a small amount of butter and brush it incredibly sparingly, letting the hot oven do the work.
What it costs you. You end up with a dry, papery snap. The version that's a deep-fried crunch is still out there and still better. The pastry shatters differently when you cut it.
600g of total sugar down to 250g
Traditional recipes use a staggering amount of sugar in both the custard and the syrup. I cut the custard sugar drastically and make a much thinner syrup to pour over the top.
What it costs you. It is noticeably less sweet. The syrup will not form a thick glaze, meaning the bottom layer of pastry softens slightly faster.

You miss the overwhelming richness of a traditional bakery slice, but the trade makes sense. The semolina still has that comforting bite, and the cinnamon syrup hits exactly the right note. You get a massive slice of pudding that actually fits into a normal day.
