What the traditional version is
A thick layer of full-fat Greek yoghurt that clings to the spoon like wet cement. Puddles of rich, dark honey that seep into the edges of the bowl. Huge handfuls of raw, oily walnuts scattered heavily over the top. It's essentially a big bowl of dairy fat and sugar, with a minor hit of protein buried underneath.

Full-fat Greek yoghurt down to 0% fat Greek yoghurt
The fat in the traditional dairy brings massive calories without adding much structural benefit. The 0% stuff is incredibly lean and packs a huge amount of protein into a small space. I whisk it vigorously to loosen the texture.
What it costs you. It lacks the silken, clotted-cream mouthfeel of the original. Fat-free yoghurt has a distinctly chalky finish.
150g of honey down to 60g
Honey is pure sugar. You don't need a swimming pool of it to get the right flavour. I whisk a little warm water into the honey to thin it out, meaning it drizzles further and coats the entire surface.
What it costs you. So: just a light glaze. A thick, sticky syrup trap was never on the table once the fat came out. You lose the intense rush of sweetness that coats the back of your throat.
100g of raw walnuts down to 40g of toasted walnuts
Nuts are dense with fat. I chop them fine and toast them hard in a dry pan. The roasting brings out the natural oils and creates so much flavour that you barely notice you're eating less than half the usual amount.
What it costs you. You don't get the same chunky, meaty bite. The topping is more of a crunchy dust than a solid layer of nuts.

The method is in the book
This is the hardest kind of recipe to mess with. When a dish relies entirely on three rich ingredients, stripping the fat and sugar away leaves you totally exposed. Toasting the walnuts is the first and only trick that really saves it. The heat wakes up the oils in the nuts and provides a brilliant roasted contrast to the sharp dairy. It eats like a proper Greek dessert, hitting the right textural notes, but your stomach will thank you.
