What the traditional version is
A dense, rich sponge made with vast quantities of butter, caster sugar and crushed walnuts. Once baked, it gets drenched in a thick, heavy syrup until the crumb cannot absorb another drop. It sits in a pool of its own juices.
What changed, and what each change costs
150g of butter down to 0g, bringing in 0% Greek yoghurt
Butter adds serious moisture but brings a colossal fat payload to a dish that already has plenty of fat from the nuts. Greek yoghurt keeps the crumb tender and pushes the protein up without weighing the sponge down.
What it costs you. The sponge loses that rich, melting mouthfeel on the tongue. It bites back a bit more, acting slightly more like a spiced bread.
600g of sugar down to 200g across the cake and the syrup
Traditional recipes use as much sugar as flour in the sponge, then boil another mountain of it for the soak. Cutting it right back lets the cinnamon and cloves breathe properly.
What it costs you. This is a mildly sweet cake. Nobody is going to mistake it for a sticky, cloying pudding anymore. You miss the classic syrupy squelch when you press your fork into it.
300g of walnuts down to 150g, adding egg whites for volume
Walnuts are brilliant but incredibly dense. Halving them and bulking the batter with whipped egg whites keeps the cake tall while dropping the fat.
What it costs you. You've got a lighter, springier texture rather than a dark, nut-heavy brick. You also have to wash another mixing bowl, which is annoying.
