What the traditional version is
A dense, cracked flourless cake that relies on ground almonds, melted dark chocolate, a massive block of butter, sugar and whole eggs. It falls apart when you cut it, sticks to your teeth in the best way, and sits incredibly heavy in your stomach. It's a brilliant dessert, but you can't eat a big slice without feeling it.
What changed, and what each change costs
250g of butter down to 50g, making up the moisture with extra egg white
The butter adds incredible richness, but the ground nuts already carry enough natural fat to keep the cake moist. Dropping the butter strips out a huge amount of fat without losing any protein. The extra egg white binds the crumb and adds pure protein.
What it costs you. The cake is slightly springier and less fudgy in the centre. You lose that absolute melt-in-the-mouth texture that only a massive block of butter can buy you. It's a fair trade for the calories saved.
Melted dark chocolate swapped for dark cocoa powder
Standard dark chocolate is mostly cocoa butter and sugar. Using pure cocoa powder gives you the deep chocolate flavour without dragging all that extra fat into the mixing bowl. It keeps the chocolate profile front and centre.
What it costs you. Cocoa powder absorbs liquid rapidly. You have to watch the bake time like a hawk or the cake dries out. Slightly more crumbly on the fork, then. Not quite as velvety, and I'm not going to pretend otherwise.
200g of sugar down to 150g
Less sugar means less empty weight in the tin. The cocoa is bitter, but 150g is still plenty of sugar to balance it out and keep the crust crisp and cracked.
What it costs you. You get a slightly sharper, darker chocolate hit. If you've got a massive sweet tooth or you're used to commercial cakes, you'll notice the drop in sweetness immediately.
