What the traditional version is
A glorious, towering pile of prawns, squid rings, and small fish, coated in a wet batter or heavily floured, then dropped into a bottomless vat of hot oil until golden brown and utterly crisp. Served hot with a mountain of lemon wedges. It's heavily reliant on the deep fryer for its signature texture and flavour.
What changed, and what each change costs
A litre of deep-frying oil down to 15g of olive oil.
Deep frying forces the seafood to absorb a massive volume of fat. It tastes incredible, but it destroys the protein for the calories. A hot oven and a minimal drizzle of oil gets you a crisp finish for a fraction of the cost.
What it costs you. You lose the deep, uniform, golden shell that only total immersion in hot fat can provide. A dry-dredged bake, then. Not a pub fish, and I'm not going to pretend otherwise.
Wet batter out, 50g of dry semolina in.
Semolina provides a coarse, sandy crunch that survives the oven. Wet batter just drips off and ruins your baking tray. It also cuts the refined starch load, leaving more room for the main event.
What it costs you. The texture is entirely different. It's a gritty, shattering crispness rather than a puffy, aerated batter. You also have to work faster so the flour doesn't turn to paste.
More prawns, sea bass and mussels.
Since I cut out around 600 calories of frying oil, there's room on the plate for more actual food. Bumping the seafood raises the protein and makes it a substantial meal.
What it costs you. Your grocery bill. Mixed fresh seafood is not cheap, especially when you're buying good quality fillets and whole prawns.
