Cwikla Beetroot Relish

What the traditional version is
Boiled beetroot, grated and mixed with freshly grated horseradish root, sugar, vinegar and salt. Sometimes a touch of mustard or lemon, but mostly it's the heat and sweetness that make it. Served cold as a relish, most often at Easter with ham or roast pork.
What changed, and what each change costs
Sugar for a measured spoon of sweetener
Sugar brings a touch of smoothness and helps the relish go slightly syrupy, but it's mostly there to take the roughest edge off the acid and heat. Dropping it for a bit of sweetener powder (whatever you can stand) keeps the taste up and the sweetness perceptible without actually loading in 40g of sugar.
What it costs you. You won't get that syrupy gloss and the relish is a little less rounded, but the whole point of cwikla is the fire and tang, not the dessert vibes. It stays punchy and goes with just about anything salty.
More horseradish added
Grated horseradish is the first thing you'll taste, and bumping up the ratio means you don't notice the missing syrup as much. You'll get a sharper hit and it helps compensate for the lost sugar-roundness.
What it costs you. If you've got a delicate palate, this is your fair warning. It's not going to be gentle, but if you wanted gentle you'd be making coleslaw.
Beetroot quantity held, but switched to hand-grated
Hand grating keeps more bite and texture than food processor mush. You lose a little of the juice, but the relish holds together better and you aren't left with a pink puddle.
What it costs you. This takes a bit more elbow grease and the bowl looks less glossy, but you get a relish you can pile up, not pour out.

The method is in the book
Is it as good as the properly syrupy traditional? No. You lose a little lushness and the beetroot won't glisten in quite the same way. But if you want the heat, the smack of vinegar and a rising burn in your nose, you're not going to notice the missing sugar for long. This is all about contrast, not pudding. It wakes up leftovers and stands up to anything fatty. If you find it a bit sharp, just add back a spoon of sugar - I won't tell.
