What the traditional version is

Sliced cucumbers salted and drained, then dressed in soured cream, sugar, a splash of vinegar or lemon, and a handful of chopped dill. Sometimes a little black pepper, always a fair bit of fat. A sloppy, creamy salad for hot days and heavy food.

What changed, and what each change costs

Soured cream for fat-free Greek yoghurt, well strained

Soured cream is what makes mizeria what it is, but it's almost pure fat. Greek yoghurt is all protein by comparison and goes even further if you let it lose its water through a sieve. It's not the same creaminess, but the tang is still there.

What it costs you. The first thing you lose is the soft, almost melty texture that soured cream brings. This comes out thicker and won't drizzle quite the same way. Still cold and fresh, but not as rich.

Sugar for a zero-calorie sweetener (sucralose or similar)

Traditional mizeria is actually sweet, not just tangy. White sugar is the reason, but you can get most of the effect with a sprinkle of something fake, and nobody's the wiser unless they're a baker.

What it costs you. If you overdo it, you get that telltale aftertaste, and it doesn't round out the tang quite as much as sugar. Go easy and taste as you go.

Upped the dill and a touch more vinegar

When the dressing's lighter, loading up on fresh dill and a bit more vinegar helps keep things lively and stops the yoghurt from dominating. It also perks up limp cucumbers if you're using the sad ones from the veg drawer.

What it costs you. Nobody's ever complained about too much dill, unless they're deeply suspicious of green things. Skip it at your peril.

The method is in the book

This is good, honestly - it's cold, refreshing and you can eat a mountain of it without getting that soured cream glaze in your eyes. The higher protein makes it surprisingly filling for a salad mostly made of cucumber. If you're at a summer barbecue, nobody will know you pulled a fast one unless they're Polish and brought their own. For the true nostalgia hit, you'll miss the runny cream and slippery finish, but this is a trade you can live with.
