What the traditional version is

Sweet yeast dough rolled around a thick filling of ground poppy seeds, softened with hot milk, butter and honey, sometimes with sultanas or orange peel.

What changed, and what each change costs

Butter out, apple in for the filling

Butter in the poppy seed filling is lovely, but it's the reason you need a nap after even a small slice. Grated apple gives the filling moisture, a bit of body, and none of the richness.

What it costs you. Nobody's pretending this is the full-fat festival version. The filling is lighter and can't glue your jaws together. You'll miss the gloss and the decadent feel, but you won't need a lie down afterwards.

Stick with whole milk, but use less in the filling

The dough and the poppy seeds both love milk for texture, but you can cut the milk in the filling by half when you're using apple instead of butter.

What it costs you. It's a bit less luxurious, and the poppy seeds won't feel as velvety. The trade-off is a pudding that's more bun than fudge.

Honey halved

Honey's the backbone of traditional makowiec, but it's easy to go overboard. You can use half and still have a poppy seed swirl that's convincingly sweet.

What it costs you. It's not as syrupy, so you don't get that full-on sugar rush. You can taste the apple and the poppy seed properly, though.

Dough and glaze lightened by skipping extra egg and cutting sugar

Dropping the egg wash and a bit of sugar from the dough is an easy win, unless your only goal is a shiny crust. Cutting sugar in the dough lets the filling do most of the talking.

What it costs you. The crust doesn't glisten and the bread is less sweet, but if you're here for the inside, it shouldn't bother you.

This isn't holiday makowiec, it's something you might take for a Friday treat and not feel like you need to apologise about. You miss out on the fudgy, shiny filling and the sense that you've scored a cake that weighs as much as your arm. Still, you get a good poppy seed swirl, a gentle sweetness and a pudding you can eat at 3pm without watching the clock for your next insulin spike. Is it better than the full, sticky version? Not a chance. Is it easier to manage if you want something with fewer regrets? Absolutely. Call it everyday makowiec, and save the butter bomb for Christmas.
