What the traditional version is
A thick shortcrust pastry base and a biscuit-like crumble topping, both heavy with butter, sandwiching a generous layer of stewed apples, sweetened and spiced with cinnamon. Finished with icing sugar after baking and served in big, comforting slices.
What changed, and what each change costs
Shortcrust base for one sheet of filo pastry
Shortcrust is a butter delivery system. Good for flavour, terrible if you're trying to fit into last year's jeans. Filo gives you a crisp layer under the apples for a fraction of the fat, but only if you don't mind the lack of crumble.
What it costs you. You lose the classic crumbly bottom and the richness that makes your fingers greasy. This is more of an apple tart now than the proper tea-time wedge, and nothing will stop the juices making the base a bit soggy if you linger.
Crumble topping swapped for a few toasted almonds
The traditional crumble doubles down on flour and butter and adds a bit of crunch. A sprinkle of almonds gives you some crunch and a hint of nutty flavour, but doesn't even try to copy the real deal.
What it costs you. Nobody's going to mistake this for proper crumble. There's crunch, but the joy of big golden clumps is gone. If you must have it, buy a treadmill.
Less sugar and more apples in the filling
Loads of sugar and apples that taste of nothing is how bad szarlotka happens. Use better apples, cut the sugar and let the tartness of the fruit do the talking.
What it costs you. A sharper, less sweet filling. If you want pure sweetness, you'll need to upend the sugar jar.
No extra butter in the filling
Butter gives the apples gloss and silk, but it's not pulling its weight nutritionally. Leaving it out means the apples taste more like themselves, which is fine if you actually like apples.
What it costs you. You miss the silky, almost jammy melt you get in the real thing. The apples might look a bit drier and don't set as firmly, so cut carefully.

The method is in the book
This is an apple pie for those who like fruit and crunch but aren't ready for a butter coma. It's lighter, sharper and you can eat a full slice without needing a nap. But let's not pretend: the original wins for texture and pure satisfaction. Filo can't do what shortcrust does, and anyone raised on real szarlotka will notice. Still, if you want to keep dessert in your life, this is a fair deal. You get a mountain of apples, a solid crunch and none of the pastry regret. Most importantly, you can go back for seconds without a stern talking-to from your waistband.
