What the traditional version is
Oxtail browned, then stewed low and slow with red wine, onion, carrot, garlic, tomato and bay leaf. The tail's high fat and collagen content gives the sauce its sheen and sticky mouthfeel, while the vegetables break down to enrich it. Served by the hunk, bone in, with plenty of sauce. Best made a day ahead and eaten with a blunt spoon.
What changed, and what each change costs
Oxtail left to chill overnight and de-fat before serving
Oxtail is about 30% fat by weight, and a fair chunk of that ends up in the gravy. Stews like this are usually eaten as-is, but chilling overnight lets you take off most of the solid fat in one go.
What it costs you. It's the first thing you'll notice when you eat it: the sauce loses that sticky, glossy coat that only comes from all the melted fat. The flavour's still big, but your lips stay dry. Whether that's a win or not is up to your dentist.
Lean beef shin used for half the meat, oxtail halved
All-oxtail gives you maximum flavour and that classic gelatin finish, but replacing half with shin keeps the protein high and the finished stew lighter.
What it costs you. You'll get less wobble and richness, more actual meat per serving. The texture is a little firmer, and the sauce's body is thinner. If you miss the stickiness, don't tell me - I probably do too.
Oil down from 30g to 10g, using a non-stick frying pan
Oxtail and shin both release plenty of fat as they cook, so there's no need to brown them in a puddle of oil. A thin slick does the job and stops the meat tearing.
What it costs you. Your kitchen won't smell as much like a chophouse after browning, but you'll notice hardly any difference in the finished dish.

If you're after the pure, sticky, decadent rabo de toro dream - do it the old way and don't apologise. This version is lighter, you'll get all the beef flavour and most of the pleasure, but your lips won't shine when you're done. Was the fat making it better? Yes. Would I do it this way again? Most weeks, probably. Especially if dinner isn't the end of the evening.
