What the traditional version is

Unripe green papaya, shredded, pounded with garlic, raw green beans, fresh chillies, palm sugar, fish sauce and lime juice. Finished with a handful of cherry tomatoes and a generous scatter of roasted peanuts. Salty, sharp, fiery and just sticky enough to glaze the strands.

What changed, and what each change costs

40g palm sugar down to 20g

The sugar is what gives the dressing that sticky, almost syrupy cling. Half it, and the glaze gets thinner, the sour lime and salty fish sauce elbow their way forward, and the dish loses some of its round edges.

What it costs you. You won't get that same almost-desserty sweetness. The crunch is still there and the sharpness is doubled. It's not the classic sticky-sweet finish you remember, but it's still a proper salad.

40g roasted peanuts down to 20g

Honestly, it's a garnish pretending to be a main event. Half the nuts and no one except the strictest grandma in Isan will notice.

What it costs you. The crunch is second not first now. It keeps the bite, but you end up chasing the odd peanut round the bowl. If you live for peanut flavour, you'll feel cheated. If you don't, you'll call it fresh.

Boost the garlic and green beans, bump up the papaya slightly

You need something to make up for the lost weight of the nuts. The green beans and garlic have so few calories you can be generous. More papaya, more bulk, and the salad looks even more impressive in the bowl.

What it costs you. You get an even bigger pile of the cold, crunchy stuff. The only expense is you'll be grating papaya longer.

The method is in the book

This one takes the hit squarely on the sugar. The original's syrupy glaze is the first casualty. What you get instead is a sharper, cleaner, more fiery salad that doesn't hang about on the tongue. It's not as sticky, but it's still a proper blast of heat and crunch, and it's a full meal at under 130 kcal a plate.
